Kenny’s Super Chilaquiles Rojos
Super Chilaquiles Roja’s
Ingredients:
4 Chiles Ancho’s(dried New Mexico Chile pods) Stemmed and de-seeded
5 tomatoes quartered
1/4 onion
2 cloves garlic
1 cup chicken broth
2 scallions finely chopped
1 handful of cilantro finely chopped
8 oz. queso fresco (crumbled)only as needed
1/2 cup of Mexican crema ( or sour cream)
1 avacado (sliced or chopped )
1 bag of good quality Mexican tortilla chips
Directions:
Stem and de-seed dry chiles,put in a medium sized pot, cover with water and cook on med-high heat till very soft ! 45 minutes to 1 hr.
Drain and put chiles into a blender. Add quartered tomatoes, onion, garlic, chicken both 2 tbsp. crema (or sour cream)and salt .
Blend until smooth! A good 3 to 4 minutes.
Stem and de-seed dry chiles,put in a medium sized pot, cover with water and cook on med-high heat till very soft ! 45 minutes to 1 hr.
Meanwhile finely chop green onion and cilantro and crumble queso fresco. In a large skillet add a 1/4 cup of canola oil and heat to medium.Add 4 cup or 4 handfuls of chips. Toss then around until covered with oil and golden brown.
Now add about 1 1/2 cups of chile mixture and toss till covered.
Serve immediately !!! They are best vert hot and crispy !!!!!!
Garnish with scallions, cilantro, queso fresco, crema (or sour cream) and slices of avacado !!!!! Disfruta !!!! (Enjoy) !!!!
